Easiest Kid Friendly Lasagna Ever

Unlike regular lasagna recipes, this kid friendly lasagna creation doesn’t require you to cook the noodles ahead of time. How’s that for easy-peasy?

Recipe Ingredients:

  • 1 jar (26-28 oz) of spaghetti sauce
  • 1 can (14 ½ oz) diced tomatoes with basil, garlic, and oregano (do not drain)
  • ½ cup water
  • ¼ cup fresh grated parmesan cheese
  • 1 egg
  • 1 carton (8 oz) part-skim ricotta cheese
  • 10 uncooked lasagna noodles
  • 3 cups (12 oz) shredded mozzarella cheese

Recipe Instructions:

Step 1:

Preheat oven to 400°F.

Step 2:

In the first bowl, combine spaghetti sauce, undrained tomatoes, and water. Mix and set aside.

Step 3:

Chop the parsley with a knife and cutting board, or place parsley in a small bowl and snip using kitchen shears.

Step 4:

In a second bowl, whisk egg. Add ricotta cheese, Parmesan cheese, and parsley. Mix well.

Step 5:

To assemble lasagna, spread 1 ½ cups of the sauce over the bottom of a 9x13 baking dish.

Step 6:

Arrange five uncooked noodles in a single layer over the sauce by placing four noodles lengthwise and one noodle crosswise to cover the bottom of the baking dish (if necessary, break off and discard ends of noodles, so noodles will fit flat). Press noodles into the sauce.

Step 7:

Spread all the ricotta cheese mixture over the noodles. Sprinkle with half (1 ½ cups) of the mozzarella cheese.

Step 8:

Top with 1 ½ cups of the sauce and the remaining five uncooked noodles, breaking noodles to fit. Press noodles into sauce. Spread the remaining sauce over noodles.

Step 9:

Cover with aluminum foil (you can refrigerate the lasagna for several hours or overnight).

Step 10:

Bake 45 minutes (55 minutes if lasagna was refrigerated), or until noodles are tender.

Step 11:

Remove from the oven. Uncover carefully and sprinkle with remaining mozzarella cheese. Recover loosely with foil; let stand 15 minutes.

Step 12:

Cut into squares and enjoy with a salad and garlic bread.
