There are times when we crave sweets, but the added sugar is not a good option for maintaining a healthy lifestyle. Here is a favorite recipe of mine that is easy to make and will satisfy your sweet tooth.
1 1/2 cups blanched almond flour
3/4 cup raw cacao powder
6 – 7 TBS. maple syrup
1 TBS. coconut oil
1/4 – 3/4 cup purified water for a creamy texture
1 TBS. brandy (optional)
Coconut flakes or walnut crumbs for topping
Mix all ingredients (you may use a food processor on dough setting).
Add water a little bit at a time. The mixture should have a creamy consistency, but not too wet. If mixture seems dry, add more water.
Using slightly damp hands, roll the chocolate mixture into small bite-size balls.
Empty coconut flakes or walnut crumbs onto a plate
Roll the chocolate balls in the coconut flakes (or walnut crumbs) until the balls are completely covered.
Muffins are done when toothpick comes out clean.
