Pretty for any holiday gathering or gifting but why wait, cranberries are in season right now! I have to thank my friend Tamby in Wisconsin for giving me the idea but more importantly the fresh cranberries picked right out of our Cranberry Bog! 😊 Don’t have access? No worries just pick some up at your local grocery store right now and don’t forget to freeze some to use any time during the year! I adapted the recipe based on my desire to balance the tartness, get a crispy crust and make it giftable in mini loaves. This is a very thick batter that will resemble cookie dough when it has finished mixing. You will need to press it into the pan to spread it out. There is no baking soda or baking powder needed in this recipe. The extended beating time for the eggs provides the necessary leavening for the cake. Do not shorten or skip the beating process.
Makes 16 mini loaves
2 cups sugar
3/4 cup butter softened (I use salted butter)
1 teaspoon vanilla (I love almond extract)
2 cups all-purpose flour see note below for gluten-free alternative
3 cups fresh cranberries
2 TBSP melted butter
8 TBSP Powdered Sugar
1/2 TSP almond extract
1-2 TBSP milk – add a bit at a time so you can drizzle it
1-1/4 cup brown rice flour + 1/2 cup potato starch + 1/4 cup tapioca starch + 1 teaspoon xanthan gum may be substituted for the all-purpose flour listed in the ingredients above.
