A delicious Italian salad dressing is hard to find. So why not make one from scratch? This versatile recipe is perfect on greens or as a marinade for chicken or fish at any time of year.
Combine in a small bowl:
¼ teaspoon salt
¼ teaspoon pepper
1 tablespoon olive oil
1 tablespoon vinegar (balsamic, red wine, or cider depending on the flavor you desire)
¼ teaspoon dry mustard
¼ teaspoon lemon
Beat the above ingredients well with a wire whisk until smooth.
¼ Cup olive oil
¼ Cup vinegar
Beat well again.
1 clove garlic chopped finely (or ¼ teaspoon of garlic powder)
Place dressing in a jar/decanter and shake well.
Refrigerate until time to serve.
Shake well before serving.
