February is American Heart Month! Try this new, healthy twist on the traditional taco. Kids of all ages will love it!


Tasty Turkey Taco Ring

Cook’s tip:  Here’s a creative way to hold your salsa: A green bell pepper “bowl!” Cut one green bell pepper in half vertically. Remove seeds. Fill half of the green pepper with salsa. Reserve the other half for another dish.

INGREDIENTS:

Taco Ring

• 1 small red onion

• 1 pound 93% lean ground turkey

• 1 package taco seasoning

• 6 ounces grated cheddar cheese

• 16 ounces (about two packages) reduced fat refrigerated crescent rolls

• 1 egg white, lightly beaten

Salsa & Lettuce

• 1 small jalapeño pepper

• ½ cup loosely packed fresh cilantro

• 1 tablespoon fresh lime juice

• 1 garlic clove

• ¼ teaspoon salt

• 1 small can diced tomatoes

• 2 cups thinly sliced romaine lettuce

DIRECTIONS:
  1. Preheat the oven to 375°F.

  2. Brush round pizza/rectangular sheet pan with oil.

  3. Cut onion in half and chop; set aside half for the salsa.

  4. Cook onion, turkey, and taco seasoning in a large nonstick skillet over medium heat 10-12 minutes, or until the turkey is crumbled and no longer pink.

  5. Transfer mixture to large mixing bowl. Fold in one cup of cheese.

  6. Unroll crescent dough and separate into 16 triangles.

  7. Arrange wide ends about an inch away from inner ring. Points should extend over edge.

  8. Flatten wide ends of dough with your hands.

  9. Scoop filling evenly over the dough.

  10. Bring triangle points up and over the filling. Tuck points under the dough toward center.

  11. Brush the top of the dough with egg white. Sprinkle with remaining cheese.

  12. Bake 20-25 minutes, or until crust is golden brown.

  13. For salsa, place ingredients, except tomatoes and lettuce, into food processor. Process until coarsely chopped.

  14. Add tomatoes and process to desired consistency.

  15. Remove taco ring from oven.

  16. Serve with salsa and shredded lettuce.
